Festival of Cheese (0)

It is hard to face the prospect of over 1100 cheese available for tasting. It is even harder to try to taste a whole load of them. Yet it is this daunting task that Karen and I took on with smiles on our eager faces. We left with overly full bellies and a new appreciation for the judges at the 24th American Cheese Society Conference and Competition.

The opening reception was at Shelborne Farms in their beautiful breeding barn. Cheese makers from Vermont were there along with other local producers. There was a meat producer who's bacon was lauded by the New York Times as "the best in New England." Personnally, I would like to change that to "the world." MMMmmm...perfect.

At the conference in Burlington, Vermont we were inundated with cheese knowledge. From making to marketing to pairings and yes finally to lots and lots of tasting. I love the quote that "cheese is milk's leap toward immortality." (Clifton Fadiman) Here goes nothing!
