Easter Weekend Food (2)

Easter weekend was filled with good food. Saturday I spent the afternoon cooking Braciole with the girls. Cooking the recipe my grandfather taught me with my kids was a real treat.

Beef Braciole

Braciole is a bundle of thinly sliced meat. My grandfather's recipe is beef filled with cheese and vegetables. Sophia called it a meat taco before we had a chance to tie the bundles up.

Sunday I made something I have thought about making since my late teens, but for some reason, have never done it. I remember seeing the picture for Easter Pie in an old cookbook and falling in love with the idea of making a traditional Italian dish with whole eggs cooked into the middle.

This year I took the plunge. I found the recipe in the Silver Spoon, the best selling cookbook in Italy for the last 50 years which has only recently been translated into English. Although there are many variations of this dish depending on the part of Italy you are in, the recipe I used was filled with ricotta, cream, parmesan, swish shard and eggs.

Easter Pie

Amazingly, my dish looked as good as the picture in the cookbook, and it tasted fantastic. Rich, creamy, smooth, the pie embodied everything I love about Italian cooking-- simple flavors combined to create a dish with depth and beauty.
